Gummy Bears

Combine gelatin, and cold water (or flavored liquid) in a heatproof container, a 2 cup pyrex measure is best. Stir gently to combine. Let sit for 5-10 minutes to give your gelatin time to bloom.

Combine the corn syrup, sugar, and sorbitol in a medium saucepan. Stir gently to combine. Bring to a simmer over medium-low heat to disolve the sugars. 

Add lecithin and cannabis infused oil. Keep heat med-low, stir/wisk gentally until the oils and sugars have emulsified. If using dry lecithin make sure it has all been disolved. Remove the mixture from the heat.

Add citric acid, flavoring, food colour (optional), and Jello to the gelatin mixture, mix with a spatula until gelatin is all combined. Microwave at full power for 20 seconds, stir, do another 20 seconds, stir. We want the mixture hot, but avoid bubbling. If you see bubbles starting to form on top, stop and stir, check the temp, when hot add to the pot with Oil, sugars. This step ensures that the jello sets up. If you skip this step the gummies will be soft.

Mix the gelatin and sugars over a med heat until the temp reaches 240 deg. Stir constantly 

Turn off the heat and let the mixture sit for 10 minutes to allow the mixture to clear, foam will collect at the top. After 10 minutes the foam should be able to be easily scooped off the surface with a spoon.

Let your gummy bears chill in the fridge for 1 hour until the bears are set. 

Coat with sugar/citric acid mix.

Let them sit uncovered for 24-48 hours with a fan. This dries out extra moisture and improves the overall texture of the gummies.
