2 cups Red lentils, rinced
4 1/2 cups water
1 cup Canned tomatoes
1/4 cup raisins
3 tbsp Ginger, grated
1 tsp Coriander
1/2 tsp Tumeric
1/2 tsp cumin
1/2 Tsp Salt
1/4 tsp Pepper
1/4 tsp Cinnamon
1 Bay Leaf

Spiced Lentil Freezer Meal Directions

  1. Place all ingredients in a crockpot and cook on low for 8 hours or on high for 4 hours.
  2. Let cool and scoop individual portions into storage containers or plastic bags. Place in the freezer and thaw as needed.
  3. Top with fresh cilantro, roasted pumpkin seeds, and serve with brown basmati rice, quinoa, or naan.
