Marinade
3 lbs Chicken wings |
1 tbsp Szechuan pepper corns |
1 tbsp White pepper corns |
4 Lime leaves (cut into very thin strips) |
3 cloves Garlic minced |
1 tsp Sesame oil |
2 tbsp neutral oil |
2 tbsp Rice flour (potato starch or corn starch) |
Sauce
3 tbsp Mayo |
1 Lime zest from 1 lime |
1 tbsp Juice from lime |
1 tbsp Fish sauce |
1 tbsp Gochugaru chili pepper |
2 cloves Garlic minced |
Garlic Lime Wings Directions
- Add the pepper corns, to a mortar and crush, the add the garlic and lime leaves, continue to pound until a uniform paste is formed. Mix in the sesame oil and neutral oil. Place the wings in a bowl and add the mixture above. Combine well, then add the starch and mix again. Let stand for 1-2 hours.
- Heat oven to 425F and place wings on a rack on a cookie sheet. Cook for 30-40 min until golden and crispy.
- While the wing cook, combine the sauce ingredients into a large bowl (to toss the wings). When the wings have completed cooking, toss with the sauce in the large bowl. Serve and enjoy.
