Ingredients

For 4 Serving(s)

Pickle for Veg

1/2 cup Water
1/2 cup Rice wine vinegar
1/4 cup Sugar
2 tsp Salt
1 Large carrot (julienned)
1/2 cup Cucumber, seeded and julienned

Sauce

1/2 cup Warm water
2 tbsp Light brown sugar (packed)
2 tbsp Rice or Black vinegar
1 tbsp Fish Sauce
1 Serano or Jalapeno or Birds eye chili minced

Pork

1/2 cup Onion (diced)
2 tsp Ginger (minced)
2 cloves Garlic (minced)
1 birds eye or Thai chili (finely chopped)
1 lb Ground Pork
4 tbsp Brown sugar
2 tbsp Fish Sauce

Toppings

1-2 heads Broccoli. Flower cut into small bites, stem peeled and julienned
1 package Mushrooms (shiitake, brown, or other)
2-3 Green onion, sliced fine for garnish
Cilantro or Basil for garnish
4 Eggs

Rice

1 1/2 cups Rice (uncooked)
1 Lime
1/4 cups Cilantro (chopped)

Crispy Pork Bowls Directions

  1. Quick Pickle:  
    Mix vinegar and sugar, divide into 2 small bowls. Add carrot to one and cucumber to the other.
  2. Sauce: 
    Combine water and brown sugar in a bowl; stir until the sugar dissolves. Add lime juice, vinegar, fish sauce and chile pepper to taste. Set aside.
  3. Rice: cook according to instruction. When cooked mix in a squeeze of lime juice and cilantro.
  4. For the Pork:
    Heat the oil in a large skillet over high heat.
    Add the onion, ginger, garlic and chili and cook for 2 minutes.
    Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.
    Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.
    When cooked set aside and give the pan a wipe before cooking the veg.
  5. Veg:
    Add sliced mushrooms to hot pan with 1 tbsp of oil, Add salt and pepper, cook until they release their moisture and that evaporates. Remove to a small bowl.
    Add broccoli florets(flower) to the pan with 2 tsp oil, mix, add salt, cook for 2-3 min, remove to a small bowl.
  6. Serve:
    Add rice to a bowl and top with pork, and veg. Add sauce to taste.
  7. Optional:
    Add a soft boiled or sunny side up egg on top.

Notes

Adjust the chilli pepper to suit your taste. 
Serrano is hotter than Jalapeno, those small red chilli peppers are hotter than both.
