1 cup Jasmine rice (rinsed well)
3 stalks Green Onion (sliced - white and green separated)
1 tbsp Sesame Oil (or other neutral oil)
1 inch Ginger minced
2 cloved Garlic, minced
1 1/2 cups Water
1 tsp Salt

Ginger-Scallion Jasmine Rice Directions

  1. Prep: Thinly slice the green onions, separating the whites from the greens.
  2. Sauté: In a pot, heat the oil over medium heat. Sauté the ginger, garlic, and scallion whites for 1 minute until fragrant.
  3. Toast: Add the drained rice to the pot. Stir to coat grains in the oil and toast for 1 minute.
  4. Simmer: Add water and salt. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes.
  5. Finish: Remove from heat and let sit covered for 5 minutes. Fluff with a fork and stir in the scallion greens.
