| 1 cup Jasmine rice (rinsed well) |
| 3 stalks Green Onion (sliced - white and green separated) |
| 1 tbsp Sesame Oil (or other neutral oil) |
| 1 inch Ginger minced |
| 2 cloved Garlic, minced |
| 1 1/2 cups Water |
| 1 tsp Salt |
Ginger-Scallion Jasmine Rice Directions
- Prep: Thinly slice the green onions, separating the whites from the greens.
- Sauté: In a pot, heat the oil over medium heat. Sauté the ginger, garlic, and scallion whites for 1 minute until fragrant.
- Toast: Add the drained rice to the pot. Stir to coat grains in the oil and toast for 1 minute.
- Simmer: Add water and salt. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes.
- Finish: Remove from heat and let sit covered for 5 minutes. Fluff with a fork and stir in the scallion greens.
