Ingredients

Marinade

1 TBSP minced garlic
3 TBSP fish sauce
3 TBSP minced lemon grass (optional)

Sauce

1 1/2 cup 1 3/8 cup smooth peanut butter
1 can 1 3/4 cups ( 1 can) coconut milk)
4 tbsp 4 TBSP fish sauce
4 tbsp 4 TBSP fresh grated Ginger
1 3/4 tbsp 1 3/4 TBSP light brown sugar
1 3/4 tbsp 1 3/4 TBSP soy sauce
1 Thai red chili sliced thin
2 tsp garlic minced
2 green onions
3 tbsp cilantro minced
1 tbsp Sesame oil

Mike and Mathilda's Satay for chicken or pork Directions

  1. Marinade meat for up to a couple of hours prior to cooking.
  2. Warm all sauce ingredients gently - do not boil. 
  3. Thread meat onto kabobs - Reserve some sauce for serving, and baste with the rest of the sauce during cooking.
