1 tbsp Oil
1 large Potato (diced 1/2
1/2 Onion diced
2 Ribs Celery Diced
1 clove Garlic smashed and chopped
2 1/2 cups Roast Beef leftovers (bit sized)
1 cup drippings (gravy or stock)
1 tsp cornstarch
salt & pepper to taste

Roast Beef Hash Directions

  1. Add olive oil to medium skillet set over medium heat. Add diced potato and cook until tender on the inside and crispy on the outside, about 5 minutes, stirring frequently. Add in the onions and celery and cook until tender, about 3 more minutes.
  2. Stir in the garlic and the shredded roast beef and cook until the beef is heated throughout.
  3. Meanwhile, heat the roast beef drippings in a small saucepan set over medium heat until reduced by about half, about 8 minutes. Whisk in the cornstarch until well combined and then pour into the beef hash.
  4. Salt and pepper to taste and serve.
