1/4 cup Ground black pepper
1/4 cup Kosher Salt
1 1/2 tbps Smoked paprika
2 tsp Granulated onion
2 tsp Granulated Garlic
Olive Oil
5-6 lb Pork Shoulder (Butt)

Franklin BBQ - Texas Style Pulled Pork Directions

  1. For the rub combine ingredients and place in a shaker
  2. Prepare your BBQ or Smoker, heat to 275. Ensure you have water in your smoker.
  3. Trim pork shoulder of excess fat (loose pieces should be tidy but still have a decent amount of fat for the long cooking process)
  4. Rub Pork with olive oil
  5. Apply a generous amount of the rub to the entire shoulder, wrap in plastic and refrigerate overnight, or go directly to the smoker.
  6. Cook at 250-275 for 4-5 hours (the should should a dark bark and the fat will have split). Spritz with apple cider vinegar (or apple juice, can add hot sauce, etc), remove and wrap tightly in heavy foil. Return to smoker and cook for another 3-4 hours.
  7. Remove when done and let it rest for 30-45 minutes, then shred and serve.

Can finish with a sweet, bbq, mustard or vinegar based sauce.
