4 Boneless Chicken breasts
400 g Pasta cooked
1 Head Broccoli
salt & pepper to taste
6 tbsp Olive Oil (divided)
6 or more cloves garlic
1 cup bread crumbs
2/3 cup freshly grated parmesan cheese.
1 tsp dried oregano
chili flakes to taste

Garlic Parmesan Chicken with Broccoli and Noodles Directions

  1. Preheat oven to 350
  2. In a small microwave safe container add 3 cloves fiely minced garlic and 3 tbsp of olive oil, gently warm in microwave. Let cool for 10 min. 
  3. Prepare the chicken breasts by pounding to 1/4 - 1/2" thick. Season with salt and pepper. 
  4. Prepare breading by mixing bread crumbs, parmesan cheese, dried oregano, chili flakes.
  5. Mix chicken with garlic oil, then toss in bread crumb mixture to coat. Place on baking sheet covered with parchment paper. Place in preheated oven for 30 min. After 20 check browning, and temp, rotate and cook until internal temp is 160.
  6. Start cooking pasta according to package directions. When done drain, add garlic oil and mix well.
  7. While chicken is cooking, finely slice 5-6 cloves garlic, add to 12" skillet along with 4 tbsp Olive Oil. Gently cook garlic until slightly browned. Remove garlic from oil and reserve to top pasta. Drain oil to small bowl and reserve for pasta. Return 1 tbsp of the garlic oil to the pan and saute the broccoli seasoned with salt to taste. Cook on med-high for 2-3 min, reduce heat to low and cover for 2-3 min.
