1 lb Pork tenderloin
1 Red pepper
2 Shallots
1 1/2 cups Corn (or other veg options or 4 strips of bacon cooks and cut into 1/2 inch pieces)
5 cloves Garlic minced
1 bag Baby bok choy
1 tbsp Ginger minced
1/2 cup Farmboy Thai seasoning mix
1 tsp Sesame oil
1/2 cup Backan's Japanese BBQ Sauce

Pork and Veg one pan dinner Directions

  1. Prepare the tenderloin by cutting it half then cut the two halves length wise. For best results pound the 4 quarters to an even thickness to promote even cooking. Season the pork with Farmboy Thai seasoning mix and let stand for 15 min or longer if you have the time.
  2. Preheat the oven to 425.
  3. Prepare the veg by slicing the red pepper and shallots in to thin strips (top to bottom). Clean the bok choy, drain well in a salad spinner, then separate the white portion from the leafy green portion, slice the white portion across the grain into 1/2 inch pieces and cut the larger leaves in half. Mix the greens with a little oil and 1 tsp of sesame oil and set aside.
  4. Mince the garlic and ginger.
  5. Combine the veg (minus the green bok choy leaves), ginger and garlic on a sheet tray, sprinkle with Farmboy Thai seasoning and add oil, mix well to combine. Arrange the veg so there is space in the centre of the tray for the pork.
  6. Add oil to coat both sides of the pork then place in the center of the sheet pan and place the sheet pan in the oven for 12-15 min. When the time is up check on the meat and veg, rotate the pan give the veg a stir, flip the pork over. Mix in the BBQ sauce make sure to coat the pork well and cook for another 5 min.
  7. When the 5 min is up remove the pork, mix the veg and add the green bok choy leaves over the top of the veg and return to the oven for another 5-10 min or when the bok choy starts to brown. 
  8. Slice the pork across the grain into thin strips. Return to the sheet pan and mix everyting well.

Notes

If you want more browning you can cook the pork in a frying pan, then add to the veg near the end.
